EASY FALL CROCKPOT SOUPS // CHEAP & EASY FAMILY MEALS // MANDY IN THE MAKING

Fall was a little lat arriving around these here parts, but it is HERE for SURE now, and these cozy soups I made in the crockpot last week sure hit the spot! These came together quickly, and made for some easy weeknight dinners for my family. Beer Cheese Potato Soup with Sausage:
1lb Italian sausage
4-6 small to medium russet potatoes, peeled and chopped
2 carrots, peeled and chopped
1 celery stalk, peeled and chopped
1/2 onion, peeled and chopped
2-3 garlic cloves, minced
2 1/2 cups chicken broth
12oz beer
1 1/2 cups half & half
2 cups cheddar cheese
Salt & Pepper to taste

Meagan’s Corn Chowder:
3 cans creamed corn
1-2 cups chopped potatoes
1-2 carrots, chopped
1 celery stalk, chopped
4 TBSP butter
2-3 cups chicken broth
1 cup half & half
salt & pepper to taste
optional: 1/4cup flour shaken with half and half before adding

Meatball Ravioli Soup:
1 bag frozen fully cooked meatballs
1 jar prepared pasta sauce
1 can tomatoes
1/2 onion, chopped
2 carrots, chopped
1 celery stalk, chopped
minced garlic
2 1/2 cups chicken broth
dash red pepper flake
8 oz dried ravioli, or pasta
optional: parmesan rind
