The secret that makes this soup so flavorful with limited ingredients is the fully-cooked sausage that simmers with the potatoes as they cook in the crockpot.
2lbs russet potatoes, peeled & chopped
1pkg fully-cooked smoked sausages (I used Italian seasoned chicken sausages)
2 1/2C chicken broth
salt & pepper to taste (I used very little)
(cook on low for 5-6 hours or high 3-4)
When the potatoes are done, stir in 4oz cream cheese & 3/4-1C half & half. Let heat through on low for 20-30 minutes and serve. Optional toppings: shredded cheese, bacon, chives, crackers).
