Creamy Chicken & Rice Soup

This is an easy soup with simple pantry ingredients that makes a delicious, comforting meal on a cool fall or winter evening! The chicken is cooked with onions, garlic, and seasonings which produce a tasty broth used to create the finished soup. Carrots and celery add to flavor, and the rice helps make the soup more filling. Don’t skip the heavy cream! It adds such richness and makes this a satisfying meal that can stand on its own with a few biscuits or garlic knots. Yum!

Creamy Chicken & Rice Soup

A deliciously cozy and satisfying soup the whole family will enjoy!

Ingredients

  • 2 2 chicken thighs *

  • 2 2 celery stalks, chopped

  • 3 3 medium carrots, chopped

  • 1/2 1/2 onion

  • 4-5 4-5 garlic cloves

  • 1 tsp 1 salt

  • 1 tsp 1 Italian seasoning

  • 1 1 bay leaf

  • 6 cups 6 water

  • 1 cup 1 white rice

  • 1 cup 1 heavy cream

  • 1 1 parmesan rind (optional)

Directions

  • In a large pot, place chicken thighs, onion, garlic cloves, salt, pepper, Italian seasoning, bay leaf, and water. (Add parmesan rind if using)
  • Bring to a boil, reduce heat and cover. Simmer for 45-55 minutes, until chicken is cooked.
  • Remove chicken, discard bone and skin (if using bone-in), and shred the meat. Set aside. Remove and discard onion, garlic, and bay leaf (and parmesan rind if using).
  • Bring broth mixture back to a boil and add celery, carrots, and rice.
  • Simmer for 15 minutes, until rice is cooked and veggies are tender.
  • Stir in cooked, shredded chicken and heavy cream.
  • Heat on low about 3-5 minutes, just until everything is heated through again.
