If you watch my videos over on YouTube, you know I’m all about using what we have in the kitchen! I hate to see food I’ve already purchased go to waste, so I’m often trying to use up open packages of things, short-dated items, produce on its last freshness leg, etc.

The funny thing about this is that often when I’m tossing the fragments together to make meals, I can come up with some of our favorite recipes by sheer accident! I took the time to write down this recipe I threw together from some items hanging out in my pantry and fridge because it was super easy and delicious!

Cheesy Ground Beef Gnocchi Skillet

Ingredients

  • 1 lb 1 Ground Beef

  • 16 oz 16 Gnocchi

  • 1/2 1/2 onion, chopped

  • 1 1 red bell pepper, chopped

  • 2 TBSP 2 butter

  • 1 cup 1 broth

  • 1 packet 1 Goya sazon seasoning

  • 4 oz 4 cream cheese

  • 1 cup 1 shredded cheese

Directions

  • In a large pot or skillet, melt the butter and saute chopped onions and bell pepper for 2-3 minutes.
  • In the same pan, add the ground beef, and brown until cooked through while onions and peppers continue to saute until tender.
  • Stir in sazon seasoning packet, broth, and gnocchi. Place cream cheese on top.
  • Bring to a simmer, and cook until gnocchi are done, about 5-7 minutes.
  • Stir to incorporate cream cheese, then stir in shredded cheddar until melted.
